Fennel's value is in its volatile oils - primarily anethole, which is the licorice-sweet aroma buyers and their customers are actually paying for. Those oils evaporate under heat. Ambient (hammer) grinding creates friction heat during milling and drives off some of the volatile oil before the powder hits a bag. Cryogenic grinding runs the seed through liquid nitrogen-chilled mills at sub-zero temperatures. More anethole survives. Color holds better. The powder performs more consistently in flavoring applications batch to batch. For food manufacturers and premium spice blenders where flavor consistency is auditable, cryogenic is what gets specified. Ambient is cheaper and adequate for bulk seasoning mixes and applications where nobody is measuring oil content.
